St. Regis Bahia Beach Chef Recipes

Plantain Mofongo stuffed with Chicken


  • 1 Large Fresh Plantain, peeled
  • 1 tsp Roasted garlic
  • 1 tsp Cilantro
  • 1 oz Butter
  • Salt, to taste
  1. Fry plantains until crisp. Place in mortar.
  2. Add cilantro, garlic, butter and salt. Mash.

Salsa Criolla

  • 2 tbsp Tomato paste
  • 1 Large Red Pepper, julienne
  • 1 Large Green Pepper, julienne
  • 1 Large Red Onion, julienne
  • 6 Leaves, Recao, halved
  • 2 tbsp Garlic, Minced
  • Salt, to taste
  1.  Sauce pot, sweat the peppers and onions until soft.
  2. Add tomato paste and garlic. Add water and simmer until thickened. Season.

Chicken breast

  • 1  chicken breast
  1. Season with adobo and grill the chicken
  2. Cut into sliceson a bias
  3. Place in a pan with garlic chopped and criolla sauce


  1. Mold, mofongo to desired shape or keep in mortar.
  2. Top mofongo with chicken  and sauce.

Garnish with herb oil and micro greens.
